Iron Chef Geoffrey Zakarian appears in the latest episode of Dinner DeeAs to demonstrate a marinated hanger steak recipe. The segment airs on FOX 13 Tampa Bay every weekday at 1 p.m. The meal includes smoky grilled Japanese sweet potatoes and a fresh gremolata. The goal is to replicate steakhouse quality at a home dinner table.
The dish centers on two hanger steaks, each weighing between 8 and 10 ounces. These are marinated for four hours in a mixture of three-quarters cup extra virgin olive oil, one-quarter cup balsamic vinegar, one-quarter cup shoyu, one tablespoon grated garlic, three tablespoons honey, and two teaspoons Dijon mustard. The steaks rest at room temperature for one hour before grilling. The meat is seared for three to five minutes per side until it reaches 125 degrees Fahrenheit. It rests for five to 10 minutes, rising to 130 to 135 degrees Fahrenheit for medium rare.
The side dish uses three large Japanese sweet potatoes. These are baked whole at 350 degrees Fahrenheit for one hour until partially tender. Once cooled, they are cut into rounds one to two inches thick. The slices are drizzled with extra virgin olive oil and seasoned with kosher salt. They are grilled over medium heat until tender and charred.
The gremolata combines three-quarters cup loosely packed minced parsley, one-quarter cup finely minced rosemary, three tablespoons finely minced shallot, one clove fresh garlic, and the zest of two large lemons and one orange. Extra virgin olive oil is added until the mixture can be drizzled. The chef seasons the mix with kosher salt to taste.
Chef Geoffrey Zakarian is promoting his new book, Original Food, in the segment. Viewers can email recipe requests to DinnerDeeAs@fox.com. Dinner DeeAs airs every weekday at 1 p.m. on FOX 13 Tampa Bay. The program also broadcasts every weekday at 7 a.m. on FOX 35 Plus in Orlando. The latest episode features this specific steak dinner preparation. Viewers can access more recipes through the show's digital platforms.
The recipe instructions specify using a 9x13 shallow dish for the marinade. The steak should be flipped after two hours if it is not fully submerged. Excess marinade is patted off with paper towels before searing. Two tablespoons of extra virgin olive oil are added to the griddle top. The steak is sliced against the grain before serving.
